MINI CAPRESE CUPS - EASY TO MAKE



Fresh, summery caprese salad stuffed into a mini phyllo cup and drizzled with balsamic glaze! An easy to make one bite appetizer!

Happy Monday friends! I hope you all had a great weekend and hopefully many of you have a short work week as well.  My weekend was filled with running, biking, pulling weeds, and working in my vegetable garden. Let’s talk about weeds for a minute. Why are they necessary other than to bug the crap out of you? Our side yard is the forgotten area on our property and it’s here that the weeds like to grow and spread like the plague.

I had planned to pull weeds Saturday because I knew it had been a few weeks since I last did it and with all the rain they were reproducing as fast as the rabbits do around here. When I went around to that forgotten side yard I stood there with my mouth open staring at 3 foot tall weeds. I was so embarrassed, how had I let it get that bad! I spent the next hour pulling and spraying them with weed killer and telling myself that I would never let them get that out of control again….we’ll see if I stick to it. Please tell me I’m not the only one that battles weeds and occasionally finds a patch that are as tall as small trees?

After the weed fiasco I went to work on my vegetable garden which is looking fantastic! My zucchini and summer squash plants are huge and finally have blossoms and teeny tiny zucchini starting to grow. My tomato plants are also huge and have a few flowers on them which hopefully means that my sweet cherry and grape tomatoes are on the way. Nothing makes me happier than harvesting and eating vegetables from my own garden! One of the things I love to make with my tomatoes are these easy and fun Mini Caprese Cups.

Mini Caprese Cups are simply half a cherry tomato, a small basil leaf, and a half or whole mini mozzarella ball arranged in a mini phyllo cup. If you’ve never used fresh mozzarella you are in for a treat. The taste is incomparable to the regular block mozzarella and I promise you will love it! Once all the cups are filled I sprinkle them with salt, pepper, and a drizzle of balsamic glaze. It’s the perfect summery one bite appetizer that can be made in 15 minutes or less.

MINI CAPRESE CUPS

INGREDIENTS:

  • 15 mini phyllo cups
  • 8 cherry or grape tomatoes, halved lengthwise
  • 8 mini fresh mozzarella balls, halved
  • 15 small basil leaves
  • Balsamic glaze for drizzling, (I used the balsamic glaze recipe drizzled on this pizza)
  • Kosher salt and fresh cracked black pepper for sprinkling on top

INSTRUCTIONS:

  1. Arrange half of a cherry tomato, half of a mini mozzarella ball, and one small basil leaf in each mini phyllo cup.
  2. Sprinkle kosher salt and fresh cracked black pepper over the tops of the mini caprese cups.
  3. Drizzle balsamic glaze over the tops of the mini caprese cups.
  4. The mini caprese cups are best if eaten within an hour after making them to prevent the phyllo cups from becoming soft.
